The research relating to the case study by Minas Gerais (Brazil) made use of sources produced by executive bodies and local and federal administrations, by social organisation, scholars – above all in the area of agricultural geography, and non structured interviews with experts. It appears possible to conclude that instances of food adulteration are limited. Contrariwise there is a certain divergence between existing regulations and the results of their being applied, in particular when it comes to protecting traditional knowledge and the consequences on the environment and on health of the wide scale use of agricultural toxic substances with a negative fallout on food safety. Some issues relating to quality standards for exports and in particular the production process in relation to meats towards the EU have not been totally identified.
